1/2 onion, diced, divided
oil, as needed
1 (12 ounce) bag veggie burger crumbles (I use Boca)
1/2 cup water
1/4-1/3 (1 ounce) bag vegan onion soup mix
1-2 tablespoons ketchup or tomato sauce
1/2 cup nutritional yeast
1-2 tablespoons dill pickle relish, or chopped dill pickle
2/3 cup biscuit mix (I use Heart Healthy Bisquick)
2 Ener-G egg replacers, prepared
2 tablespoons water
fresh tomatoes, sliced, to garnish
lettuce, chopped, to garnish
onion, diced, to garnish
dill pickles, to garnish
jalapenos, chopped, to garnish
1. Preheat oven to 400 degrees F. Grease 4x8" loaf pan. Saute 1/2 the onion with a touch of oil. Add burger crumbles, water, onion soup mix and ketchup. Simmer for a few minutes.
2. Whisk in nutritional yeast and dill pickle relish. Combine egg replacer with biscuit mix and water. Spread out in prepared loaf pan. Top with burger filling. Bake for 20 minutes.
3. Let cool for 5 minutes. Serve topped with garnishes, if desired.
It is strange I was craving this, as I had never had it when I was omni, and it never would have appealed to me. Strange what a sinus infection will do to you.
