1 cup nondairy milk (I use unsweetened soy)
1/3 cup sugar
2 tablespoons flour (I use whole-wheat)
2 tablespoons cocoa powder
1 tablespoon vanilla extract
1. Boil milk with sugar.
2. Add the flour and lower heat, stirring for about 6 minutes, until thick. Careful as it will get thicker after it has cooled.
3. Stir in cocoa and vanilla. Chill or eat warm.

This recipe is very adjustable. To make coconut pudding, add coconut extract and remove the chocolate/vanilla, etc. Many, many possibilities.
