1 English muffin
1-2 slices soy turkey (I use tofurky)
1-2 slices white soy cheese slices (I use pepper-jack)
1/2 avocado sliced vertically
1/3 red pepper sliced vertically
handful of broccoli-sprouts or deli-sprouts
Spread:
1 tablespoon vegan mayo
1 tablespoon pesto
1 tablespoon sun dried tomatoes finely chopped
2 teaspoon Dijon mustard
1 teaspoon of Italian seasoning
1/2 teaspoon Cajun (I use oldbay)
I don't usually measure out ingredients.. may be off.
-Split open English muffin and toast it.
-While toasting, mix ingredients for spread in bowl.
-When finished toasting put spoon of spread on each side.
-On one side put "turkey" then "cheese" and put into toaster oven on 200 until cheese is melted.
-On other side layer sprouts, then avocado (with a light layer of salt), then red pepper.
-Put your sides together and enjoy!
