Sunshine Melon

Ingredients: 

1-2 Honeydew melon (could throw in a Galia swell)
1 yellow grapefruit, which has been left to become sweet
1 pink grapefruit
Squeezed juice of 2 ripe oranges
small handful of fresh mint

Directions: 

Cut or ball the melon into chunks. (1 inch?.. but how you like it!) Halve the grapefruits, peel and `de- pith`. Slice the grapefruit lovingly into pithless segments, saving the juice which will escape. Mix into melon in a nice bowl. Then squeeze over the orange juice. Chop - or tear- mint finely and stir through the fruit gently.
Leave this for about 10 mins for the flavours to mix. The mint changes and enhances the fruit flavours wonderfully!
I love mine with some earl grey tea, whole meal toast and ginger jam. You could have it for a starter to a main meal though. V detoxing!
