1 1/2 sticks softened vegan buttery sticks
1 1/3 cups sugar
2 egg replacement
1 1/2 cups mashed banana
2 3/4 sifted flour (can be 1/2 and 1/2)
3/4 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup vegan sour cream (Tofutti) (non hydrog)
1 cup chopped walnuts optional
Grease pan.
Cream "butter" and sugar then add mashed banana.
In another bowl sift together all dry ingredients. Add flour mixture to banana mixture alternating with the sour cream combine well. Stir in walnuts and lastly add the Ener G eggs. Pour batter into a large loaf pan and bake @ 350 F for 1hr and 15 min. Cool on a wire rack for 20 min. Turn out of pan and continue to cool.
