1 lb package small red beans
1 yellow onion+1 red bell pepper+2 stalks celery+5 sprigs parsley
5 cloves garlic
1 Tablespoons cajun seasoning
1 tspn Paprika
1 tspn cumin
1/2 tspn cinnamon
2 tspns oregano
1 cup white rice+1 cup water+salt, spices to taste+ 1TBS olive oil
Rinse & sort small red beans and put in a glass microwave safe casserole with 1/2 water to cover-microwave for 5 minutes. Chop vegetables very fine with a cleaver or large chefs knife-they should look like confetti. Saute veggies in 1/4 cup oil in an enamel or nonstick pot on med hi for 5 mins. Add garlic and spices and cook and stir until the mix almost resembles a paste. Dump in beans from microwave and cook on med stirring a bit until the liquid absorbs- you want the beans to absorb all that awesome flavor! Add 6 cups of water to the pot. Cover and cook on med till beans are tender add 1 cup white rice, 1 cup water, 1 Tablespoons olive oil to prevent stickage, salt and more spices to taste put heat to low and cook till done-make sure it doesn't burn. enjoy
