3/4 cup vegan margarine (I use Earth Balance)
1 cup sugar
2 Ener-G Egg replacer "eggs"
1 teaspoon vanilla extract or 1/2 teaspoon lemon extract
1 teaspoon salt
2 1/2 cups all purpose or pastry flour
1 teaspoon baking powder
1. Combine margarine and sugar with a fork until creamy/fluffy. Add "eggs" and vanilla or lemon extract.
2. Separately, combine dry ingredients. Blend into wet ingredients 1/2 cup at a time. Cover and chill in the fridge for at least one hour.
3. Preheat oven to 400 degrees F. On a lightly floured surface, roll dough out 1/8" thick. Cut into desired shapes with cookie cutters or with the rim of a jar or juice glass. Grease or parchment paper cover cookie sheet.
4. With a spatula, move cookies to prepared cookie sheet Bake 6-8 minutes or until golden. If you'd like, you can put sprinkles on them just before baking.'
