1 small onion finely chopped
1 red pepper finely chopped
1 link soy-sausage
1 cup spinach finely chopped
1/2 block tofu
2 Tablespoons olive oil
1 small clove garlic minced
salt, pepper, your choice of seasoning
- Heat 1 Tablespoon olive oil in a pan over medium heat- Add onion, season and saute- Add sausage and stir- In a separate small pan, heat olive oil over medium heat- Add tofu and garlic- Break up in pan, season and cover- In pan with onions, add red pepper and spinich and season lightly- Add tofu and stir
Serve alone or with pita bread and lebneh (recommended)
