1 1/3 cups lettuce
2/3 cup cilantro
1/2 onion
2 cloves garlic
1 inch ginger root, chopped
1 lemon, juiced
1/2 cup water
1 yellow bell pepper
1 cucumber
4 plus Roma tomatoes
1) In a blender, combine lettuce, cilantro, onion, garlic, ginger, lemon juice, and water. Chop bell pepper and cucumber in half and add half of each to blender along with 2 tomatoes. Blend well.
2) Chop remaining bell pepper, cucumber, and tomatoes into bite-sized pieces. Divide among four soup bowls and add blended soup. Stir to combine and enjoy!
If the green color isn't appealing to you, leave out the lettuce and/or cilantro.
