1 12-ounce package extra firm tofu, drained and cut into bite-sized chunks
2 tablespoons olive oil
1/2 cup barbecue sauce
6 vegan submarine sandwich rolls (8-inch hot dog buns)
1 cup vegan cheese, shredded
In a large pan, place olive oil and heat on medium. Add tofu and fry until browned and a little crispy. Once browned, add barbecue sauce. Once thoroughly heated, fill buns with mixture and top with cheese.
That's It! If you like you can add any other vegetables to the tofu if you wish. My son just likes it with tofu.
My son who is not a big fan of tofu at all can eat two of these with no problem. Really yummy and tasty.
