1 cube of vegetable stock
3 small beets (chopped or diced)
1 medium red onion (chopped)
1 teaspoon onion powder
1-2 cloves of garlic (chopped)
a couple healthy squirts of Braggs
2 teaspoon basil
2 teaspoon oregano
1 large red tomato (diced)
2 1/2 cups of water
Boil the water and add the vegetable stock, stirring until dissolved. Add all the ingredients, cover, and simmer for 30 minutes or until the beets are nice and soft. Enjoy!
