1 clove garlic. minced
handful baby spinach, chopped
1 tablespoons olive oil
1/4 pound spaghetti or pasta shape of choice (about a quarter of the average package)
dash or two of hot pepper flake
salt and pepper, to taste
a few sprinkles of preferred vegan grated parmesan
This recipe serves one, multiply by the number of people dining.
Cook pasta according to package directions.
Heat olive oil in a large saute pan on medium-low heat, add garlic and saute (make sure it's not for too long or else it will burn) add pepper flakes and spinach, saute until spinach is entirely wilted. Season with salt and pepper.
Drain pasta, reserve 1/4 cup of the cooking liquid.
Add pasta to the spinach mixture, still on the heat, along with the reserved water. Stir until sauce is slightly thickened and reduced.
Sprinkle with vegan parmesan.
