1/3 cup whole corn kernels
1/4 cup finely chopped carrots
1 serving of "herbed" couscous
1-2 cups baby spinach
2 teaspoons olive oil
black pepper
soy sauce
Into a small pot heat 1 teaspoon of olive oil. Add corn, and carrots and cook for about 3 min. Add black pepper to taste and cook until corn has an even golden colour. Transfer corn and carrots to a plate. In the same pot, heat 1tsp olive oil and add spinach stirring frequently. Add 1-2 splashes of "lite" soy sauce. Cook until spinach is uniformly dark green. Transfer to plate. In the same pot prepare couscous as directed on package. (Plain couscous works fine as well). Remove pot from heat and cover with plate for 5 min as couscous stands. (The heat from the couscous keeps the "sides" warm until the entire meal is done.)
