1 cup silken tofu
1 stick vegan butter
2/3 cup light coconut milk
2 teaspoons vanilla extract
1 5.2 ounce can sweetened coconut
2 vegan pie shells, unbaked

Preheat oven to 300 degrees.
Blend tofu until smooth. Add next 4 ingredients, in order, and mix well. Evenly distribute mixture between two pie shells.
Place pie shells on one cookie sheet and bake on middle rack for approximately 35 minutes, or until pie shell is completely baked and brown. Cool completely before serving.
