1 cup quinoa, uncooked
1 bunch kale, torn up, stems removed
about 12 cherry tomatoes, coarsely chopped
2 cups water
1 veggie bouillon cube
Rinse the quinoa to reduce any bitterness.
In a medium saucepan, dissolve the bouillon cube in the water.
Add everything else, cover the saucepan, and bring to a boil.
Reduce heat and simmer, covered, for about 15 or 20 minutes, until quinoa is cooked.
