Baked Tofu and Fresh Veggie Sandwich

Ingredients: 

2 slices of whole grain bread (try hemp, it's hearty and yeast free!)
1 slice of baked tofu (white wave variety tomato basil, or preference) cut horizontally into 2 slices
vegan mayonnaise
Dijon mustard
6-8 fresh spinach leaves
1/4 avocado cut lengthwise
1/2 Roma tomato sliced horizontally into thirds

Directions: 

Coat one slice of bread with vegan mayonnaise, one slice with Dijon. Assemble sandwich beginning with spinach on one slice, adding tomato, tofu, and avocado.
Enjoy!
For variation add red onions and hummus opposed to Dijon.
