1 medium onion, large diced
3 cloves garlic, minced
1/2 - 1 jalapeno pepper, minced
12 oz of seasoned textured soy protein or other seasoned, crumbly meat substitute (I highly recommend vegan chorizo)
2 cups chopped tomatoes or 1 14 oz can chopped tomatoes
1 6 oz can mushrooms
1/2 cup of sliced olives, green or black, whichever happens to be your favorite
about 1/2 a 13 oz bag of plain tortilla chips
Saute the first 3 ingredients until onions are translucent. Add the textured soy protein and mix well over medium heat until lightly browned. Add the tomatoes, mushrooms and olives, heat and mix well.
Crumble two very generous handfuls of chips and add to the mix, remove from heat.
Lightly spray a 13x9 dish and add a layer of chips, cover with mix and cover that with more chips. (Note: For those who desire it, you can add approx 2 cups of cheese substitute at this point) Bake in a 400 degree oven for 20 min or until well heated.
