Samosa Quesadillas

Ingredients: 

1 tablespoon olive oil
2 tablespoons scallions, diced
2 cups mashed potatoes
1/2 cup peas
salt and pepper, to taste
1 1/2 teaspoons curry powder
4 (8") tortilla wraps

Directions: 

1. Heat oil in pan and add scallion. Cook until tender. Add mashed potatoes, peas, salt, pepper and curry powder, and mix together until heated thoroughly.
2. Add more curry, if desired. In a skillet, spray with oil and lay down tortilla.
3. Scoop potato mix onto 1/2 the tortilla and fold over. Cook 1-2 minutes on each side, until golden brown.
4. Put on plate, cut into fourths and serve. Repeat for the others.
Serve with pineapple mango salsa!
