1 cup brown rice (2 cups cooked)
1 small yellow onion, chopped small
1 tablespoon olive oil
1 (15 ounce) can black beans (or dry beans soaked thoroughly and half cooked)
1/2 cup fresh cilantro, chopped or minced
juice of 1 lime, divided
1/2 tablespoon ground ginger
1. Get the brown rice started cooking (I love rice cookers - can't go wrong). Saute onion in a pan with the oil until slightly translucent or slightly browned.
2. Put the beans in a kettle with the onion, cilantro, ginger, and half of the lime. Let it simmer on medium for 10 minutes or so - you may want to add a little water if it gets dry.
3. When heated thoroughly and the beans are soft, take it off the heat and add the rest of the lime juice (and more cilantro if you'd like... even more ginger if you like a lot).
4. When the rice is done, mix (or pour over) and serve. Yum.
