4 tablespoons canola oil
2 tablespoons water
3/4 cup plain soy yogurt
1/4 cup soymilk
1/2 cup sugar
egg replacer equivalent to 1 egg
1 cup spelt flour
1 1/3 cup wheat bran
1 tablespoon soda
pinch salt
1/2 cup or more of raisins
Mix oil, water, sugar, and egg replacer together. Add remaining ingredients and mix until just combined.
Bake 375 degrees for 20 minutes. I have a convection oven so mine were definitely done at 20 minutes. The original recipe calls for the muffins to be baked at 400 degrees for 20 minutes, so please note that the cooking times will vary!
