2 medium sized raw beets, peeled and shaved thinly
1/2 sweet onion, sliced very thinly
1-2 ears fresh corn kernels
2 teaspoons maple syrup
1 tablespoon extra virgin olive oil
1 tablespoon lemon juice
salt and pepper, to taste
1 tablespoon apple cider vinegar
1 small apple, diced
1. Combine all ingredients thoroughly in a resealable container. Shake together vigorously.
2. Let marinate for at least 30 minutes in refrigerator. The colder the salad and longer it has marinated the tastier.
For a pretty presentation, line a platter with butter lettuce leaves and place salad on top.'
