3 cups of light coconut milk
3 cups of soy, rice, or almond milk
1 cup of medium grain rice
1/2 cup of sugar
1 tablespoon of vegan buttery spread
1/4 teaspoon salt
2 teaspoon vanilla extract
1/4 teaspoon nutmeg
Mix all ingredients to a large pot.
Cook over medium heat. When bubbles form, reduce heat to low. Simmer until the rice is tender, stirring occasionally to avoid clumping of the rice. This should take about 25-30 minutes for the cooking process.
When the rice is tender, remove from heat and chill. Sprinkle with cinnamon and serve.
