2 very ripe bananas
1/2 cup applesauce
1/2 to 3/4 cup soy milk
1 teaspoon apple cider vinegar
2 tablespoons molasses
1/4 cup spelt flour
2 teaspoons baking powder
dash salt
1/2 teaspoon cinnamon
2 tablespoons flax meal
3/4 cup oat bran
In blender, mix bananas, applesauce, 1/2 cup soy milk, molasses and vinegar.
In a bowl stir together all dry ingredients. Add wet to dry and mix, adding more soymilk if it seems dry or too gummy.
Fill 9 medium sized muffin tins and bake at 350 degrees Fahrenheit until they seem done (puffed up, golden brown, springy when touched).
