3 large sweet potatoes, peeled and chopped
1 carrot, peeled and chopped
5-10 garlic cloves, peeled
1/4 cup olive oil
1/2 cup nondairy milk (I use soy)
salt and pepper, to taste
1. Boil sweet potatoes, carrots, and garlic until tender.
2. Put all ingredients into blender or food processor until creamy.
3. Add additional liquid to desired consistency, if needed.
These mashed potatoes are so quick, easy and delicious I make them all the time. I usually serve these alongside sautéed vegetables and tofu with a sauce made from soy sauce, ginger, jalapeno, cilantro and lemon. Enjoy!
