1 cup dark corn syrup (Karo brand blue label)
1/8 teaspoon salt
1 cup brown sugar
2 teaspoons vanilla extract
2 Ener-G egg replacers
2 tablespoons applesauce
1/2 -3/4 cup chopped pecan pieces
1 1/2 cups all purpose flour
3 Tablespoons vegan margarine
1 Tablespoon applesauce
water
This recipe is from Aunt Jessie and Grandma Sue.
Begin by making the crusts. Preheat the oven to 350 degrees F. Mix together the all purpose flous, margarine, 1 tablespoon applesauce. Mix until the mixture resembles coarse corn meal. Add in cold water, tablespoon by tablespoon until dough forms. Knead the dough until it holds together well.
Roll out the dough thinly. Cut out circles of dough (About 2 1/2 inches diameter) and pat the circles into a mini tart pan. (You could use a muffin pan, but the finished product will be a different size and you might need to adjust quantities.)
Now assemlbe the filling. Combine all the remaining ingredients together, and mix well. Spoon about a teaspoons worth of filling into each un-baked mini tart crust. It should only be about 3/4 of the way full.
Bake the little pie bites at 350 degrees F for 20 minutes. Cool 5 minutes before removing from the pan. Store in an airtight container. These do not freeze well.
Notes: This is one of my omnivore brother's favorite dessert snack things. It's like a bite-size pecan pie. They are really tastey still hot from the oven.
