Gingerbread

Ingredients: 

1/4 cup Earth Balance, chopped
1/2 cup boiling water
1/2 cup molasses
2 teaspoons baking powder
1 teaspoon ginger, or more
1/4 teaspoon salt
1/3 cup sugar
1 1/4 cups flour

Directions: 

Preheat the oven to 325 degrees for an 8-inch pan, or 350 degrees for muffins.
Add Earth Balance to hot water and stir until melted. Add molasses to that.
Mix the dry ingredients together and add them gradually to the wet ingredients, stirring until just mixed. Do not over mix.
Pour into a greased 8 or 9-inch square pan or greased muffin tins. Bake 35 minutes for the pan, 15 minutes for the muffins.
This is best served warm with some sort of whipped non-cream, or just sprinkle with confectioner's sugar.
