1/4 package silken firm tofu
2 cups mixed vegetables - carrots, red pepper, water chestnuts, baby corn
1/2 to 1 cup vegetable juice (depends on how much liquid you want in your soup)
chili flakes - use to own discretion
1/4 cup peanut sauce
Toss tofu and vegetables into a pot, pour the vegetable juice on top and let it cook for 5 minutes.
Add peanut sauce and chili flakes, stir to make sure the sauce is mixed in well. Let simmer for 15 minutes on medium heat.
Hearty, healthy, spicy, yummy. What could be better?
You can sprinkle some peanuts on top to make it pretty!
