1 onion (finely chopped)
2/3 cloves garlic (very finely chopped)
1 inch ginger root (finely chopped)
1 teaspoon pickled green chili (finely chopped-fresh works too)
3 tablespoons brown sugar
2 tablespoons vinegar (red wine or cider)
2 teaspoons tomato paste
3 teaspoons soy sauce
3 teaspoons lemon juice
1 teaspoon mustard (I like to use French)
11/2 tablespoons corn flour
1/2 pint water
optional: small tin chopped pineapple

Saute onions in oil in a small pan, when they start to soften add the garlic, ginger and chilies.
After a few minutes add the sugar and the vinegar.
Add the tomato paste, soy, lemon juice And mustard. Stir well together.
Add the corn flour and mix it through the mix before pouring on the water. Also add pineapple if desired.
Bring to the boil then simmer for 5 minutes or so, stirring occasionally. Add the honey while its simmering.
