500g firm tofu – mashed
1 onion – finely chopped
4 cloves garlic – finely chopped
1/2 cup chopped nuts - I use cashews/ pecans/ almonds
1 cup vegan bread crumbs - or 2 slices bread crumbled
2 tablespoons rice flour (optional)
small bunch parsley, finely chopped
4-5 tablespoons of tamari (or soy sauce)
salt to taste
dried herbs to taste (I use spicy Italian)
1 tablespoon olive oil
Drain and mash the tofu with your hands until it is fairly fine. Combine all ingredients in a bowl and mix thoroughly. Let sit for 15 minutes for flavours to blend (optional).
Use hands to firmly press meat ball size balls and place on a lined baking tray. Bake at 200ºC for 30 minutes, then turn balls and bake for another 20 minutes. Let cool slightly before serving as they will hold together better.
I make these if ever I have to take a finger food for a get together and they are always a big hit served with tomato/chili sauce.
