1 potato
1 clove garlic
1 teaspoon soy sauce
1/4 cup olive oil
1 tablespoon dried basil or 1/4 cup fresh basil
2 cups spinach
1. Preheat oven to 425 degrees F, and bake potato 45 minutes-1 hour, until pokable with a fork but not quite done.
2. Toss garlic in the blender with soy sauce, oil, and basil until minced very small. Add spinach and blend until finely chopped.
3. Take potato out, cut it in half lengthwise. Scoop out the insides and mix them in a bowl with the spinach mixture. Mix it by hand so the potato will be chunky.
4. Scoop this mixture back into the potato skins and put them back in the oven for 30-45 minutes.
