6 tablespoon non-hydrogenated vegan margarine
2 cloves garlic, minced
2 yellow onions, chopped
1 pound mushrooms, thinly sliced
3 cups vegetable broth
basil to taste
1/4 of a cup chopped parsley
1/2 cup medium barley
Melt margarine in a casserole dish. Add onion and garlic saute a few minutes. Add the mushrooms, sauté till all is golden. Add the basil, parsley and barley toss lightly. Add the broth, bring to boil. Remove from heat, cover and bake at 375 degrees F for 45-50 min. Toss and serve.
