2 1/2 cups whole wheat flour/bread flour
1/2 cup oat flour
1/2 cup turbinado sugar
1 1/2 tablespoons egg replacer powder (do not pre mix)
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
6-8 bananas, pureed
2 cups pure maple syrup (brown rice or agave works too)
1/2 teaspoon vanilla
1/2 cup nondairy milk
1/4 cup oil
1 cup pecans, dates, raisins, chocolate chips, or walnuts, optional
1. Preheat oven to 350 degrees F. Lightly oil or line 2 loaf pans with foil. In a bowl, combine dry ingredients and blend thoroughly.
2. In a second bowl, combine all wet ingredients and blend with a mixer to remove any lumps. Combine wet/dry ingredients until just mixed; the batter will be slightly lumpy.
3. Add any optional goodies to batter and fold in. Pour into prepared loaf pans and bake 45 minutes or longer until toothpick inserted into the center comes out clean.
