3 Granny Smith apples, cored and cut into 1-inch pieces (no need to peel)
2 cups whole fresh cranberries, or less, to taste (I used about 1 1/2c)
3/4 cup white sugar
1 1/2 cup old-fashioned oats (not quick cook)
1/2 cup packed brown sugar
1/3 cup flour
1/2 cup (1 stick) vegan butter, melted
Heat oven to 350 degrees, and spray a large (2 quart) baking dish liberally with cooking spray.
In a large bowl, mix the apples, cranberries, and white sugar. Spoon into the prepared baking dish.
You can use the same bowl to now mix the oats, brown sugar, and flour. Stir in the melted butter.
Sprinkle the oatmeal mixture evenly over the top of the cranberries and apples. Bake at 350 for about 45 minutes until bubbly and the apples are tender.
This is great hot or cold, with nuts or without, with some vegan ice cream or without. It tastes kind of like a pie but is healthier than a pie, even good for breakfast.
If cranberries aren't in season, you could use whatever fruit you want-- I think I saw a recipe on this site for a strawberry-mango crisp actually... anything would work!
