Truffle Tart

Ingredients: 

1 pre-made pie crust
10 oz baking chocolate
6 oz (1/2 a package) silken tofu (not light)
1/4 cup vegan cream cheese
1 cup sugar
optional: 1 tablespoon espresso powder, raspberry extract or vanilla extract

Directions: 

Combine tofu, cream cheese, sugar, and optional flavoring in food processor or blender. Blend until smooth. Melt chocolate in a double boiler and then combine with tofu mixture. Garnish with leftover chocolate curls or melt extra chocolate for a glaze. Let cool for two hours.
Enjoy! It is in intense tart!
