6 medium sized potatoes, chopped
olive oil, as needed
1/4 cup ginger, finely grated
2 tablespoons mustard seeds
1 teaspoon cumin
1/2 teaspoon turmeric
1-2 dried chilies, crumbled
1/4 cup coconut cream
1. Boil, drain and mash potatoes.
2. Heat oil in a pan, and saute ginger, spices, and chilies until brown and fragrant.
3. Add coconut cream and spice mix to pan of mashed potatoes and mix. Reheat and serve.
