3/4 cup warm water
1 tablespoon olive oil
1 1/2 teaspoons salt
2 1/4 cups flour (I mix half white, half whole wheat)
1 teaspoon sugar
1 teaspoon yeast
1-2 cups cooked brown or white rice with coconut milk added to taste
1 block extra firm tofu fried in canola oil
1 1/2 cups steamed broccoli
PEANUT SAUCE:
1/3-1/2 cup peanut butter
1/3-1/2 cup coconut milk
2 tablespoon apple juice (could use orange, lime, lemon juice)
garlic clove/s to taste, minced
1/8 to 1/4 teaspoon cayenne pepper
cilantro to taste (fresh or dried)
Preheat oven to 450 F.
Prepare dough by mixing water, oil, salt, sugar, and yeast. Stir in flour adding a little at a time until a sticky dough forms. Knead dough for about 3 minutes. Cover dough with olive oil and let sit covered with cloth in a warm place ~30 minutes.
While dough is rising, cook rice adding coconut milk to taste once fully cooked. Also, begin frying tofu and steaming broccoli.
Prepare peanut sauce by whisking together peanut butter, coconut milk and fruit juice. Add the spices to taste. This should NOT be very liquidy.
After dough has risen for 30 minutes, shape to fit a large flat pan. Bake at 450 Fahrenheit for about 5 minutes. Remove from oven and carefully spread the coconut rice over the dough. Top with fried tofu, steamed broccoli and peanut sauce. Return to oven and bake for another 5-10 minutes depending on your oven. Check that it is done by lifting corner of dough.
