3/4 cup cornmeal
3/4 cup flour
1/4 cup sugar
1 teaspoon baking soda
1 1/2 teaspoons baking powder
2 tablespoons flax mea
1 1/4 cups nondairy milk (I use soy)
1 tablespoon apple cider vinegar
1/2 cup apple sauce
1/4 cup vegan margarine, melted
1. Preheat oven to 350 degrees F and grease an 8x8" pan.
2. Mix wet ingredients in one bowl, mix dry in another. Add wet to dry, and mix well.
3. Pour into prepared pan, and bake for 20 minutes or until golden brown.
Optional add ins: 1/2 cup green onions, chopped1/2 cup jalapeƱos, chopped1 cup vegan mozarella + 1/2 cup nutritional yeast
