1 pound water-packed firm or extra firm tofu
1/2-1 cup diced carrots or sweet potatoes
1/2- 1 cup fresh or frozen yellow corn kernels
Braggs or other seasoning to taste
little oil for pan
optional: fresh garlic & ginger
In a saute pan heat oil on medium. Add garlic or fresh ginger if you like. Cube tofu and add it to the pan along with carrots/potatoes and corn. Add seasoning of your choice & serve.
My sister created this for her kids and they love it. My family loves this as well!
