prepared hummus
Romaine lettuce
1 red bell pepper
1 yellow bell pepper
1 avocado
alfalfa sprouts
1 cucumber
1 carrot
1 lemon
6 flour tortillas
Cut bell peppers into halves and remove pith and seeds and then into strips. Peel carrot and cucumber, cut into strips and slices consecutively. Cut avocado in half and slice flesh of each side. Break up lettuce leaves into bite size pieces.
Spread one side of each tortilla generously with hummus. Top with veggies and sprouts, then sprinkle with freshly squeezed lemon juice.
This recipe is versatile and can be suited for any taste with substitutions. Great with various types of flavored hummus, or freshly home made. My boyfriend likes this with cheddar cheese added.
