1-1/2 bananas, cut in half lengthwise, then into bite sizes bits
1/2 cup vanilla nondairy ice cream (I use Tofutti)
1/2 cup orange juice
1/4 cup vanilla soy creamer
3 tablespoons lemon juice (1 lemon)
1 apple, cut into bite-sized chunks
1 orange, cut into bite-sized chunks
1 pear, cut into bite-sized chunks
2 kiwis, cut into bite-sized chunks
1-1/2 cups sliced grapes
1/2 cup dried tropical fruit blend (I use Mariani Tropical Medley)
1/2 cup roasted walnuts
cinnamon, to taste
1. Dressing: In a blender, combine 1/2 banana, ice cream, orange juice, soy creamer, and lemon juice; blend until smooth.
2. Salad: In a bowl, combine apple, orange, pear, kiwis, grapes, dried fruit, walnuts, and cinnamon; toss to thoroughly mix.
3. Pour dressing over salad; toss to coat.
