1 1/2 pounds or 750g Russian banana fingerling potatoes, whole
2 large leeks, coarsely diced
3 medium tomatoes, diced
1 can chickpeas
1 can sliced mushrooms
1 can vegetable broth
few dashes olive oil
black pepper to taste
3 garlic cloves, sliced
oregano leaves or lemon grass
fresh basil
Combine all ingredients in a casserole dish. Cover and bake at 350 Fahrenheit (175C) for 45 minutes to one hour.
