Nutritious Veggie Patties

Ingredients: 

2/3 cup shredded carrot
2/3 cup diced celery
1 medium potato, shredded
2 tablespoons diced onion
1/4 cup diced green bell pepper
1 tablespoon fresh parsley
1 tablespoon fresh basil
1 cup ground RAW sunflower seeds (grind in food processor)
Ener-G Egg Replacer for 1 egg
1/4 cup organic ketchup
1 heaping tablespoon nutritional yeast or Brewers yeast
3 tablespoons whole wheat flour, or whole wheat pastry flour, or 1 tablespoon flax meal &
2 tablespoons flour
1/2 teaspoon salt
1 tablespoon canola oil

Directions: 

Preheat oven to 375 Fahrenheit. Mix all ingredients together in a large bowl until well blended. Mixture will be wet.
Shape mixture into 9 or 10 patties and place on a lightly oiled baking sheet. Flatten the patties out if you like them thin & crispy.
Bake for 10-15 minutes, flip them and bake an additional 10-15 minutes on the other side. Cooking time depends on personal taste. (Longer for crispier patties).
I serve these with all natural applesauce, steamed veggies, and 3-grain pilaf. My kids love these!!!
