4 cups fresh orange juice
1/2 teaspoon cinnamon
1 teaspoon vanilla
4 red-skinned sweet potatoes, peeled and cut into 1 1/2" slices
1 orange, sliced thinly
1. Preheat oven to 350 degrees Fahrenheit. In bowl, mix orange juice with cinnamon and vanilla. Set aside.
2. Arrange sweet potatoes in a large ovenproof dish and cover with juice mixture. Cover with lid or foil.
3. Bake, stirring and turning occasionally, for 40 minutes or until tender. Garnish with orange.
