2 slices vegan multigrain or granary bread
1/2 ripe avocado
harissa paste (just a little amount- on tip of knife)
1 teaspoon sunflower seeds
1 teaspoon spring onions (scallions)- chopped
few drops of lime juice
freshly ground salt and pepper to taste
In a small bowl mash avocado with fork until smooth, add onions and lime juice.
Spread the mixture on 1 slice of bread, then scatter small amount of harrisa on the top.
Follow with sunflower seeds, salt and Pepper. Put second slice of bread on Top, and enjoy this mouthwatering sandwich!
