1 to 1 1/2 cups white rice (I used instant)
1 14 oz can tomatoes (any kind)
1 14 oz. can kidney beans (I used dark red, but light red is fine too)
1 onion (optional)
1 green bell pepper (optional)
Cook rice according to package directions.
Drain the can of beans. Set aside.
When rice is done, add the tomatoes, beans, and onion and pepper (if including.)
Let simmer for 5 to 10 minutes or until warm, stirring often.
Serve immediately, or serve cold if you prefer!
