4 1/2 cups (one liter) soy milk
1 inch fresh ginger
2 cinnamon sticks
1 teaspoon cardamom seeds
1 teaspoon fennel seeds
2 teaspoon brown sugar
1/2 grated nutmeg-nut
This makes a wonderful and very hippie-ish morning drink. Or evening drink, or dinner drink. You get it: great for every occasion.
1. Let the ginger, cinnamon, cardamom and fennel simmer in 1 cup soy milk. This takes about 10 minutes.
Ok, for this to work out nicely it is very important that it doesn't boil. Boiled soy milk is nasty, and easiƶy sticks to the pan. So keep it hot, but not bubbling.
2. Add sugar, nutmeg and the rest of the soy milk and simmer for 5-10 minutes.
3. Strain off the spices and serve hot.
