1 lb. shelled edamame
1 red bell pepper
1 can corn kernels
1 can golden hominy
3 tablespoon rice wine vinegar
1 teaspoon vegetable oil
1 tablespoon soy sauce
chopped green onion to taste
1 block extra firm tofu, cubed (optional)
Boil edamame for 5 minutes, rinse and drain. While boiling, chop bell pepper into small pieces. Also chop green onion (I usually use about 2-3 tablespoon but it's up to you). Open and drain corn; open and drain hominy. Stir all veggies together. Add oil, vinegar and soy sauce in and stir well. If you are a salt fanatic like me, add an additional Tbsp. of soy sauce. This is best when it sits for a couple of hours; if you want to add tofu, it's best to add it just before serving. My Mom gave me this recipe and it's delicious and VERY healthy!
