1/2 cup Earth Balance (or other vegan margarine/shortening)
1 cup natural peanut butter
3/4 cup sugar
3/4 cup brown sugar
1/2 teaspoon baking soda
1 cup applesauce
1 teaspoon vanilla extract
1 3/4 cup spelt flour (whole wheat or white can be substituted)
1 cup quick oats
1/3 cup ground flax meal
1 tablespoon vegetable oil
3/4 cup chocolate chips
Mix all ingredients and drop onto a cookie sheet. Bake at 375 for 9 to 11 minutes. Be careful when taking the cookies off the sheet--they don't hold together too well until they've cooled a bit!
These taste absolutely decadent, like they should be terrible for you, but they're fairly healthy as far as cookies go! Adapted from the Peanut Butter Fudge Cookies recipe also on VegWeb.
