4 firm cooking apples
1 cup (approx) raw sugar
2/3 cup (approx) vegan margarine
1/2 cup broken nutmeats (pecans are excellent)
4 tablespoons brandy (optional)
Preheat oven to 350ºF.
Blend sugar, margarine and nutmeats very well.
With the point of a sharp knife, remove stems and blossoms of apples, hollowing out a "dimple" at each "pole". Pack the resulting dimples with sugar mixture and place apples in a small baking dish. (Some may stand better if placed upside-down). Sprinkle with brandy. Bake for 45 min to 1 hour, or until apples are tender.
Can be kept in the fridge for about a week; warm in microwave to serve as margarine will set up.
