1 red pepper
1 green pepper
1 tin sliced black olives
1 large onion
3 cloves garlic minced
1 1/2 cup chopped mushrooms
olive oil
basil, oregano, parsley
red wine (optional)
1 tin diced tomato
1 tin crushed tomato
Heat olive oil and sauté onions and garlic till onions go soft. Pour in a little red wine and simmer down for a few minutes.
Throw in peppers and mushrooms till partly cooked. Stir in herbs till coat the vegetables. Add the olives.
Pour in 1 tin diced tomatoes, 1 tin crushed tomatoes. Stir and simmer on low med for 1 hour.
Serve over pasta or rice
